My favorites!
I have tried just about all of the brands of bulk Castletrano olives available on Amazon. These are by far my favorite as they have a good flavor and nice firm texture. As a rule almost all olives are more salty then I want, and these are not an exception to the rule. However, I have discovered that if I dump out the brine and replace it with water (completely cover them or the tops ones will still be salty), place them in the fridge for a day and let the salt leach out into the water. They will have a nice buttery/nutty flavor, and won't be a problem for your low salt diet! This means I can eat a bowl of them and not feel guilty :) If you like a little salt, just dump some of the brine (1/2 to 1/4 depending on how salty you want them) and cover with water, soak and enjoy! I have found that the Lock & Lock 47oz Pickle container is perfect for these, as 1 bag fits just right in the container. I have two, I eat our of 1 while the salt is leaching out of the second... that way I always have olives!

Different lots - different quality - Sanniti Brand
I wish I had paid attention to the brand here. Same inconsistancies as their jar olives for which I've previously submitted a photo comparing jars.5 bags - 3 different lot numbers.2 bags bright green olives in clear brine, 3 bags drab green olives in cloudy brown brine.In all bags, the texture of the olives range from mushy to firm, are salty and no one has mentioned they are very sour. Just like green olives without the pimento. These shouldn't be sour at all - like black olives. You can soak away the salt and sour but you can't soak away the slightly odd flavor that these Castelvetrano olives have. On the plus side, with the acidity and saltiness, these things should last 100 years. I mean, there is no expiration date anywhere.

They are ok but not as good as the Roland brand.
I am a loyal customer of the pitted castelvetrano olives from Roland. They have unfortunately been sold out for months so I purchased these as a replacement. The brine is very very strong so I had to rinse them twice for them to be edible for my palate. They are firm and fresh which I like but the flavor is just not as clean and bright as the Roland brand.I also don’t like that it’s small individual plastic packages of olives. The packaging was secure though and no leaks.I would say this is the best alternative to the 3-4 lb can of Pitted Castelvetrano olives from Roland. I’m too afraid to try the glass jar alternatives, too many reports of cracked jars upon delivery.

Quite Good But Product Description Needs Work
The pitted Castelvetranos versus the unpitted olives are much more in favor with me. I understand unpitted it you are doing catering trays and the such because they present better and also give a good mouth feel tasting experience. However, if you just want to munch some olives and some cheese along with your favorite wine or champagne spitting pits is less than optional.I also find the pitted Castelvetrano olives tend to be a little riper/softer than the olives with pits. The ones with pits sold in most stores (Marzetti or the like) are so green they have an unripe taste and have to gnawed off the pit.These pitted Castelvetranos are much riper than those in the jars. I find these to be saltier than the same type purchased from local Italian farmers markets or high end foodies fresh olive bars but that extra saltiness is easily remedied by a quick rinse just before serving.I rate these pitted Castelvetrano olives a 4 versus a 5 for only 2 reason. The saltiness needs rinsing (not a big deal) but the Amazon listing information said they would come in a tin with 5 individual 1# bags inside. They, instead, came in a cardboard box with no tin included. Therefore, I had to hunt to find a storage container that I could be sure would contain the brine if one of the 5 packages happened to leak..Overall, a good purchase and I would buy them again.I do hope however, that Amazon will force the seller to making more accurate descriptions of the product offering.

Excellent.
These olives are as close to fresh as you're likely to get anywhere outside of the Mediterranean basin. They vary slightly in quality from batch to batch, and you will find a few pits or pieces of pits (only a couple every few pounds but be careful! You don't want to break a tooth.) but in general they are crisp and delicious. Several friends recently described them as "addictive."They're buttery, fruity deliciousness in a basic brine that can be rinsed away or not - you're going to love them either way. I just bought a 5 lb order so I could give a pound each to five very lucky family members.Highly recommended.

Don’t waste your money!
These are not fresh olives, they are your typical green, brined olives you can get from any supermarket. Don’t waste your money on these, they are nothing special. In fact, if you want some, I have 4 lbs of unopened bags you can have! Buy the jarred olives instead of these, they taste the same and are way cheaper.

Good olives, plain and simple
Ordered these a couple times now and I love them. I've never really liked olives but had heard good things about fresh olives and these changed my mind. Absolutely love these, though they do tend to be very salty, which works well as long as you're eating them with something else and know to underseason it a bit to compensate.I've gotten the ones with pits too for a buck or two more twice and found that it's incredibly worth it to me to go with these instead. Maybe I don't have the right tools/technique, but the pits are a pain to remove and I end up with shredded up olive pieces. Will buy again when I run out.

The flavor of these olives is outstanding. This is the second time I've ordered these olives. The first time the olives were beautiful, bright green whole olives. This time the olives are a duller color of green and not in good shape. Some are broken, smashed and the holes are not in the usual spot. They still taste good, but aren't beautiful like my first order, that was disappointing.
